Overview
Unlinking a resource from a course removes the reminder learners see at the end of that course. The resource itself stays in Documents & policies — you're only breaking its connection to the course, not deleting it.
Step-by-step instructions
Go to Settings, then Course settings.
Find the course you want to unlink the resource from and click its title.
Scroll to the Linked Documents & policies section.
Find the resource you want to unlink.
Click the Remove button on the right of the resource's details.
Click OK to confirm.

No. Unlinking only removes the connection between the resource and the course. The resource stays in Documents & policies, and any other links (to other courses or segments) are unaffected.
What happens to learners who've already read the linked resource?

Their reading record is kept. Unlinking stops the resource appearing at the end of the course from now on, but past activity stays in your reporting.

Not through that course. If the resource is also set as organisation-wide required reading, or linked to a segment they're in, they'll still see it that way.
