Your blood sugar can also rise without eating carbohydrates. Your liver can release glucose into the bloodstream. This happens, for example, during stress. Under stress, your body produces stress hormones (cortisol and adrenaline), which in turn causes your liver to release glucose into your bloodstream. During a nightmare, for example, your body experiences stress, and your blood sugar can also rise.
